Loosely based on the beetroot soup in the cookbook, but sweeter! Makes 3 – 4 portions.
• Splash of olive oil
• 2 chopped onions
• 350g steamed beetroot, chopped
• 5 sticks of celery, chopped
• 2 apples, finely chopped
• 1 heaped teaspoon ground ginger
• Juice of half a lemon
• Salt and pepper
• Boiling water
• Coconut milk kefir to swirl in
Heat the oil then gently fry the onions and celery for 5 - 10 mins. Add the ginger, beetroot, apple and lemon juice, stir well, then cover with water and simmer for 10 mins. Blend and add salt and pepper to taste. Serve then swirl in a couple of spoonfuls of kefir.
