Mushroom Omelette with Purple Sauerkraut

Get your morning off to a good start by adding fermented purple sauerkraut to your omelette. This will introduce more good bugs to your boost your gut microbiome. It works well with the omelette, adding a slightly salty, tangy flavour with a bit of crunch. Being purple it delivers more of those health enhancing phytonutrients too.

Ingredients

• 2 medium sized chestnut mushrooms, finely diced
• Small knob butter or dash of oil
• 2 eggs whisked
• 1 tablespoon purple sauerkraut

Method

In a small frying pan on a medium heat cook the mushrooms with a pinch of salt for 4-5minutes until turning golden brown. Then add the egg, cook for a further 4-5 minutes until the surface is starting to firm up but is still slightly loose.
Fold in half and place on the plate. Spread the purple sauerkraut on top. Add ground black pepper and serve.

    This sounds lovely. I’m also interested in the sauerkraut recipe. Is it in the cleverguts diet book. I can’t find it in the cleverguts diet book !

    Sounds really good and will try it when I have made the Purple Sauerkraut which is on p 257 of the Clever Guts book.

    This is a great recipe, and I’m a big fan of Clares sauerkraut. I decided to make a double bach and ended up with overflow issues in my one litre jar, however things have settled down and after three weeks my brew went into the fridge. It is amazing how it went from quite salty to vinegery. It is delicious and easy to add to any meal.

    I’ve got ordinary sauerkraut, purple is brewing at the moment. I added a tsp of tumeric and a bit of black pepper into the mix. Was very enjoyable. Will make again, thanks.
