Grilled Spicy Salmon with Avo Salsa

Ingredients

• 1 avocado, cut into small pieces
• 2 salmon fillets
• 8 cherry tomatoes, halved
• 2 tbsp. olive oil
• 1 tbsp. fresh coriander, chopped
• 1 tbsp. lime juice
• ½ tsp. paprika
• ½ tsp. dried chili flakes
• 2 lemon wedges
• Sea salt
• Freshly ground pepper

Method

Place the avocado, cherry tomatoes, coriander, lime juice and 1 tbsp. of olive oil into a bowl. Toss to combine.

Next, mix the chili flakes and paprika together in a small bowl. Place the salmon pieces on a plate (skin side down) and drizzle over remaining olive oil. Press paprika/ chili mixture onto salmon pieces. Preheat the grill (preferably a BBQ grill or grill pan) to medium high. Once hot, place salmon skin-side down onto the grill. Cook for 2 minutes, and then turn and cook for an additional 3 minutes (or to your liking). Serve salmon with avocado salsa and lemon wedges. Enjoy!

    according to your recipe the avo salsa is just avacado and tomato but is that not mango and red onion i see in the picture??? calories would also be helpful.
