Great side dish for fish or Mexican food.
Ingredients
• 1 cup corn kernels 1 cup diced tomato 2 Tbsp minced red bell pepper 2 Tbsp diced red onion 2 Tbsp cider vinegar 1/4 tsp dry mustard 1/8 tsp tumeric ¼ tsp sugar 2 dashes ground cumin
Method
Whisk together the vinegar, mustard, turmeric, sugar, and cumin until the sugar dissolves. Add the prepared vegetables, stir, and let sit for 20-30 minutes, stirring once in a while.
