Chicken and Asparagus Ceasar Salad

Delicious way of having a ceasar salad with the benfits of fermented foods.

Ingredients

• Cooked chicken breast
• 100ml Kefir
• juice of half a lemon
• 10g parmesan cheese, finely grated
• black pepper
• salt
• fresh basil leaves
• 100g asparagus tips
• baby leaf salad leaves/romaine lettuce leaves

Method

Cook the asparagus tips, slice the chicken breast.
Mix the kefir, lemon juice and seasoning with the chopped basil leaves and half the cheese. Pile up the leaves and asparagus. Put the chicken into the dressing and mix it all up, coating all the chicken in the dressing. Pour the chicken over the leaves and tips and grate the remaining cheese on top then devour it!
